Preparing and cooking your own breakfast sausages is not only really easy, it’s also really practical and smart. For that one in a million time when you actually want a breakfast meat option different from bacon, pork sausages are the natural second choice.
Making your own patties allows you to exercise quality control in flavour, fat content, salt and sodium levels, along with Playing With Your Food and experimenting with various herb and spice blends. Also, you can mix and shape the patties in advance so they are all set to go when you want them.
1/4 tsp. Red Pepper Flakes, crushed (adjusting to your tastes)
The Fun Parts
In a small bowl, large enough to hold all of the ingredients so that you can easily mix them together, lightly mix the Ground Pork, Sage, Thyme, Garlic Salt, Salt, Pepper, Parsley, Brown Sugar and Red Pepper Flakes.
Gently mix all of the ingredients together so that they are evenly incorporated.
Take a small amount of the seasoned pork mixture and saute it in a frying pan until cooked through. Taste your sample for seasoning and adjust as you deem necessary. Always taste as you go, and in this manner you can make necessary adjustments as opposed to having your whole batch improperly seasoned.
Using a portion scoop, scale or just winging it, shape portions of the seasoned pork mixture into patties of even size and thickness. this will ensure even cooking for all of your patties
Saute the patties in a large saute pan being sure to season with salt and pepper, for approximately 5 minutes per side (depending on their size). You want an internal temperature of the pork to be 160F (73C).
