Homemade Breakfast Sausage Patties

A nice accompaniment to any breakfast meal. Make your own homemade breakfast sausages!! They’re really easy to make, and by making your own, you can easily quality control all of the ingredients, fat content, sodium levels and customize the tastes to your liking. This homemade sausage patty recipe offers a nice balance of heat kick with a touch of sweetness. But as always, Play With Your Food, adjust the flavours to satisfy your own preferences!

All You Need

  • 2 LBS. Ground Pork
  • 2 tsp. Sage, dried
  • 1 tsp. Thyme, dried
  • 1/2 tsp. Garlic Salt
  • 1 tsp. Fresh Cracked Black Pepper
  • 1 tsp. Salt (adjusting as you go)
  • 1 Tbsp. Fresh Parsley, very finely chopped
  • 1 Tbsp. Brown Sugar
  • 1/4 tsp. Red Pepper Flakes, crushed (adjusting to your tastes)

The Fun Parts

  1. In a small bowl, large enough to hold all of the ingredients so that you can easily mix them together, lightly mix the Ground Pork, Sage, Thyme, Garlic Salt, Salt, Pepper, Parsley, Brown Sugar and Red Pepper Flakes.
  2. Gently mix all of the ingredients together so that they are evenly incorporated.
  3. Take a small amount of the seasoned pork mixture and saute it in a frying pan until cooked through. Taste your sample for seasoning and adjust as you deem necessary. Always taste as you go, and in this manner you can make necessary adjustments as opposed to having your whole batch improperly seasoned.
  4. Using a portion scoop, scale or just winging it, shape portions of the seasoned pork mixture into patties of even size and thickness. this will ensure even cooking for all of your patties
  5. Saute the patties in a large saute pan being sure to season with salt and pepper, for approximately 5 minutes per side (depending on their size). You want an internal temperature of the pork to be 160F (73C).
  6. Serve along side your breakfast main course and enjoy!!


These can be prepared ahead, mixed, shaped and even cooked, and then reheated as you need them.
