Chicken Tikka Masala

A staple on almost every Indian restaurant menu. Chicken Tikka Masala is a mixture of buttery tender and moist chicken in an explosively flavourful spice infused tomato based sauce. While it may seem daunting to the uninitiated, it is surprisingly simple to prepare and cook. I strongly encourage everyone to prepare Chicken Tikka Masala at least once. It is a great recipe to have in your repertoire, and a good reason to expand your spice rack!

All You Need

  • 1 1/4 LB Chicken Breasts, Boneless, cut into bite sized pieces
  • 1 Cup, Plain Yogurt
  • 1 Tbsp. Lemon Juice
  • 4 tsp. Cumin, Ground
  • 1 tsp. Cinnamon, Ground
  • 2 tsp. Cayenne Pepper
  • 2 tsp. Fresh Cracked Black Pepper
  • 1 Tbsp. Fresh Ginger, minced
  • Salt, to taste
  • 1 Tbsp. Butter
  • 1 Garlic Clove, minced
  • 1 Jalapeno Pepper, chopped
  • 1 Tbsp. Paprika
  • 1 Can, Tomato Sauce (8 oz)
  • 1 Cup, 35% Cream
  • 1/4 Cup, Cilantro, Chopped

The Fun Parts

  1. In a bowl, large enough to hold the ingredients, combine the yogurt, lemon juice, 2 tsp. Cumin, cinnamon, cayenne pepper, black pepper, ginger and salt. Add in the chicken and stir well to evenly coat the chicken pieces with the marinade. Cover with plastic wrap and refrigerate from 1 hour to overnight.
  2. Remove the chicken from its marinade and discard the marinade. Cook the chicken however you prefer (grilled, broiled, sauteed...) until it is just cooked and nicely browned on all sides. Transfer to a platter.
  3. In a heavy skillet or sauce pot, over medium heat, melt the butter and saute the garlic and jalapeno until tender. Add the remaining cumin (2 tsp.) paprika, and salt.
  4. Stir in the tomato sauce and 35% cream. Reduce the heat to low and simmer until the sauce thickens. Approximately 20 minutes. Taste and adjust seasonings.
  5. Add your cooked chicken, mix it well in the sauce and simmer for approximately another 10 minutes. Taste and adjust the seasonings.
  6. On a serving platter over basmati rice (optional) or with naan bread (optional)or both and garnish with the chopped cilantro.


The chicken tikka masala can be prepared a day or even two in advance, refrigerated covered and then gently reheated when needed.
