Bacon and Avocado Salad

All You Need
1 LB. Bacon, Cooked Crisp and Chopped 1 English Cucumber, Diced 1 Cup, Cherry or Grape Tomatoes, quarterd or halved 1/4 Cup, Rice Vinegar 5 Avocados, Peeled, Pitted and Chopped 1/4 Cup, Cilantro, Chopped 3 Green Onions, Chopped 4 Cups, Your Favourite Greens (Romaine, Arugula, Spring Mix etc...) Salt, to taste Fresh Cracked Black Pepper, to taste
The Fun Parts
In a heavy bottomed pot or pan, cook the bacon until crispy, drain on a paper towel lined plate. In a salad mixing bowl, add the cucumber, tomatoes, rice vinegar, salt and pepper. Gently stir in the bacon, avocado, cilantro, green onions and cucumber. Lightly mix to incorporate all the ingredients. Taste and adjust seasonings as necessary. Serve the mix on a bed of your favourite greens.
