All You Need

  • 1/6 Watermelon, seedless, chilled and cut into ~1" pieces
  • 1/2 Red Onion, small, halved and thinly sliced
  • 1/3 Cup, Fresh Cilantro, chopped
  • 3 Tbsp. Fresh Mint, thinly sliced
  • 1 Lime, juiced
  • ~4 oz. Feta Cheese, crumbled
  • 1 Tbsp. Olive Oil
  • ~2 tsp. Balsamic Vinegar, or more to your taste
  • Salt, to taste
  • Fresh Cracked Black Pepper, to taste

The Fun Parts

  1. Gently toss together all the ingredients in a chilled bowl. Mixing carefully so you maintain the integrity of all the ingredients.
  2. Season with salt and pepper to your tastes.
  3. Serve chilled !!
