All You Need

  • 1/6 Watermelon, seedless, chilled and cut into ~1" pieces
  • 1/2 Red Onion, small, halved and thinly sliced
  • 1/3 Cup, Fresh Cilantro, chopped
  • 3 Tbsp. Fresh Mint, thinly sliced
  • 1 Lime, juiced
  • ~4 oz. Feta Cheese, crumbled
  • 1 Tbsp. Olive Oil
  • ~2 tsp. Balsamic Vinegar, or more to your taste
  • Salt, to taste
  • Fresh Cracked Black Pepper, to taste

The Fun Parts

  1. Gently toss together all the ingredients in a chilled bowl. Mixing carefully so you maintain the integrity of all the ingredients.
  2. Season with salt and pepper to your tastes.
  3. Serve chilled !!

Notes

1. Serve chilled, from a chilled bowl to chilled salad plates.

2. Chop your herbs as close to serving time as you can to avoid bruising and causing unsightly appearance.
