Creamy Mac and Cheese

Growing up, mac and cheese never came out of a box and it was served, usually at lunch as a meal. Or often tossed together with whatever leftovers we happened to have lying around in the fridge and baked, called it a casserole, and called it a day. Very tasty, but that’s just not the same as a good and steaming hot extra creamy, extra cheesy bowl of homemade mac and cheese.


Serves 4-6 as a side dish; 3-4 as an entree

All You Need

  • 1 lb. of your favorite short pasta (elbow, penne, shells etc), cooked al Dente
  • 2 TBSP All Purpose Flour
  • 2 TBSP Butter
  • 1+ Cup of Aged Cheddar Cheese, or other, shredded for easy melting.
  • 1/4 Cup of Grated Parmesan (optional)
  • 1 Cup 2% Milk;
  • 1 Cup 35% Cream, can substitute lower MF creams.
  • Salt, to taste
  • Fresh Cracked Pepper, to taste

The Fun Parts

  1. In a heavy bottomed pot, melt the butter and add the flour, whisk well to incorporate them and create a roux.
  2. Allow the roux to cook for 1-2 minutes whisking all the time so that the flour taste cooks out, but the roux does not color. (You may need to add more fat and or flour, so if you do, make sure to add them in 1 : 1 ratios.)
  3. Add the milk/cream mixture to the roux, and slowly allow it to come to a simmer, stirring regularly to prevent sticking and scorching. The milk/cream will thicken, as it cooks.
  4. When it is thick enough to coat the back of a spoon, reduce the heat to low and add in your grated cheese(s). Stir well until the cheese is melted.
  5. Taste the cheese sauce for salt. Some cheeses, especially if you use grated parmesan are salty enough. So always taste before you continue.
  6. Add your al Dente cooked pasta to the cheese sauce and stir well, to make sure all of the noodles are coated in the sauce.
  7. Allow the Mac and Cheese to cook for a few more minutes. This is why you want your pasta cooked al Dente, because it will cook further in the cheese sauce.
  8. Serve in a side dish, or appropriate entrée bowl and garnish with fresh cracked pepper.


Experiment with other types of cheeses, creams, ingredients (fried sausage, onions, vegetables etc.)

Alternatively, this mixture can also be added to a covered casserole dish and baked in a 350F oven for 30 minutes, to make it a Baked Mac and Cheese side. Equally tasty.
