Vegetable Couscous

This recipe was contributed by a member that asked to be left un-named. It seems like a pretty straight forward recipe (guideline) with just some minimum assembly required.

All You Need

  • couscous cooked, cook it ahead of time
  • diced celery
  • diced carrots
  • diced onion
  • fresh quartered mushrooms
  • cubed sweet peppers
  • chick peas, drained and rinsed
  • other vegetables that you like
  • salt
  • pepper
  • butter or vegetable oil

The Fun Parts

  1. Cook your couscous and set aside (keep it warm)
  2. In a soup or large sauté pan, add the fat and sweat the vegetables together until they are translucent and tender. Season with s & p.
  3. Add your cooked couscous and toss well.
  4. Check the seasonings again and eat. 🙂
