You don’t need a recipe to assemble an egg salad sandwich, so here is the recipe for a delicious egg salad. Naturally serve it on your choice of bread. Toasted or not. This recipe is for one sandwich portion, but scales up easily.
1 Tsp. Onion, finely diced (green onion, white onion, or chives)
Salt, to taste
Fresh Cracked Pepper, to taste
The Fun Parts
Using an egg slicer, or box grater, grate the hard boiled eggs (with the large holes) into a bowl. The idea being to keep the pieces larger.
Add the Mayonnaise, Dijon and finely chopped onion.
Season lightly with the Salt and Pepper.
With a fork, lightly mix the ingredients together without mashing them all together. Trying to keep the pieces of egg larger.
Taste for seasonings and adjust as you see fit.
Serve on your favourite type of bread.
