All You Need
1/6 Watermelon, seedless, chilled and cut into ~1" pieces 1/2 Red Onion, small, halved and thinly sliced 1/3 Cup, Fresh Cilantro, chopped 3 Tbsp. Fresh Mint, thinly sliced 1 Lime, juiced ~4 oz. Feta Cheese, crumbled 1 Tbsp. Olive Oil ~2 tsp. Balsamic Vinegar, or more to your taste Salt, to taste Fresh Cracked Black Pepper, to taste
The Fun Parts
Gently toss together all the ingredients in a chilled bowl. Mixing carefully so you maintain the integrity of all the ingredients. Season with salt and pepper to your tastes. Serve chilled !!
